An iconic event during Primeurs week
Every spring, Primeurs Week brings together professionals from around the world to celebrate the finest wines of Bordeaux. Among the highlights of this prestigious event, Academie du Vin de Bordeaux‘s gala dinner occupies a special place: a moment suspended in time, where wine and gastronomy come together in rare harmony.
Once again this year, we had the honour of designing and preparing this exceptional dinner. It was a source of pride for our teams and a challenge that matched our high standards.
A historic tasting, 81 exceptional wines
The Académie du Vin dinner centred around a unique tasting experience: 81 wines, most of them presented in large formats (magnums, jeroboams, imperials, etc.), tracing 80 years of vintages.
From Château Latour-Martillac 1935 to Château d’Yquem 2015, via the Premiers Crus Classés Château Latour 1975, Lafite Rothschild 1985 and Mouton Rothschild 1995, guests were taken on an emotional journey through the decades, guided by the precision of the pairings and the magic of the moment.
Gastronomy designed to complement the wines
To accompany this extraordinary wine journey, our chefs have created a tailor-made menu: seared tuna heart, Gers chicken supreme, assorted mature cheeses and petits fours.
Each dish has been designed with wine in mind, with the aim of enhancing without masking, accompanying without dominating. An approach that reflects our vision of haute cuisine: respectful, precise, and designed to evoke emotion.

Behind every plate, every gesture of service, every smile, it is our teams who make the difference. Chefs, maître d’s and those behind the scenes: everyone worked with rigour and passion to make this dinner a complete success.
